摘 要:水产品保鲜标准是水产品质量安全标准体系组成部分之一。水产品保鲜标准的基础是水产品保鲜技术,标准化对科技创新又有强有力的推动作用。加强水产品保鲜标准化,实现技术创新与标准化的结合,二者相互促进和转化,是我国渔业可持续发展的需要。回顾了水产品保鲜工艺技术和装备技术的研究进展,简要介绍了国内外水产品保鲜标准的现状,指出了目前国内水产品保鲜标准上存在的一些问题及今后发展方向。

The Current Research Situation of Aquatic Products Preservation Standard

Abstract: The aquatic products preservation standard is part of quality and safety standard system of aquatic products. The foundation of the aquatic products preservation standard is the aquatic products preservation technology, and the standardization also has the powerful promotion effect to the scientific innovation. It is the requirement of the sustainable development for China fishery to strengthen the aquatic products preservation standardization, to achieve the combination of technology innovation and standardization, and the mutual promotion and transformation for both of them. This paper reviewed the research progress of processing technology and equipment technology of aquatic products preservation, briefly introduced the current situation of aquatic products preservation standard in China, and also pointed out its existing problems and the future developing direction.
