酸性电解水在水产品安全中的应用

摘要:酸性电解水作为新型的安全环保消毒剂,能高效广谱杀菌,可现场生产,操作简便并且成本低廉,在水产品安全中有着潜在的应用前景。该文概述了酸性电解水的生成原理和杀菌机制,主要介绍了其在水产品安全中的应用。

Application of acidic electrolyzed water in the safety of aquatic products

Abstract: China is a big country for production and export of aquatic products, the safety of aquatic products is directly related to the development of Chinese fisheries industry. As a newly developed disinfectant, Acidic electrolyzed water (AEW) is safe, environmentally friendly, and could inactivate bacteria efficiently and with broad-spectrum bactericidal capacity. AEW can be produced on-line with simple operation and low cost, so it has a good potential to be used in the safety of aquatic products. The generation principles and bactericidal mechanism of AEW were summarized in this paper, and its application in the safety of aquatic products was proposed.
