摘要:食品富含营养,但容易因微生物和酶的作用而腐败变质,尤其是高蛋白、低脂肪的水产品,因此迫切需要动态掌握食品流通过程中品质的变化。货架寿命指示器的研发对物流过程中食品品质的监控有着重要的意义。时间—温度指示器(TTI)是一种监测温度变化历程的有效手段,可以快速有效地实时掌握食品的新鲜度和预测食品的货架寿命。本文主要介绍了TTI的工作原理、类型,以及国内外TTI的研究进展,提出了未来TTI研发的重点及其发展前景。

Research progress of Time-Temperature Indicator (TTI) in the food logistics process

Abstract: In recent years, more and more people have been paying attention to food safety with the improvement of living standards. Foods are rich in nutrition but susceptible to microbial and enzymatic deterioration, especially for aquatic products with high protein and low fat content. So the development of shelf life indicator is of great importance to monitor the food quality dynamically in the logistics process. Time-Temperature Indicator (TTI) is an effective way to monitor the temperature variation. Freshness of food can be known timely and shelf life can be predicted rapidly and exactly by applying TTI. The working principle, types of TTI, and the research progress of TTI in China and abroad were introduced in this paper. Meanwhile, the research focus and perspective of TTI were also put forward.
