摘要:我国是世界贝类养殖大国,出口量相当大。其中的贻贝是我国沿海重要的一种经济贝类。目前,贻贝的加工利用研究已成为我国水产加工领域的研究热点。本文从贻贝的营养及药用价值、活性物质的提取技术、综合利用、加工技术与食品安全方面进行了综述,同时对贻贝加工利用中存在的问题进行探讨,对贻贝加工研究的发展前景和方向进行了展望。

Advances on the Research in the Processing and Exploitation of Mussel

Abstract: China has a largest shellfish breeding yield in the world; the value of exports is also considerable. Mussel is an important kind of economic shellfish in the coastal area and is favorable by the people, and has an appetizing delicacy and rich nutrition. The research of Mussels processing and utility technology has become a research hotspot in the field of aquatic product processing in China. The status of the value of nutrition and medicine, the extraction of bioactive substance, the integrated utilization, processing technology and food safety in recent years was introduced in this paper. While the problems of processing and utilization were also discussed, the developments for processing and exploitation of Mussel were put forward.
